Make sure you do a thorough check of every aspect of your phone as soon as you get it. Check for dead pixels, do full black and full white screens to check for screen defects(yellowing and spots), screen artifacting(sign of SoC damage)/touch sensitivity going out, and double check that all antennas are fully working by doing checks on reception (you might want to get another known working phone to compare), make sure GPS reception locks on to less than 30 feet accuracy in clear skies without obstruction to a view of the sky, and that the SnR ratios for GPS satellite reception is acceptable. In this case I'd be a bit stricter in terms of tolerance for antenna reception, as a sealed unibody doesn't have to deal with potential loss of contact with antennas.

Things that are not a defect: Rattling near camera or around volume keys, it should be faint and it is usually either the volume key slightly moving around or the autofocus unit in the camera.
One more way to function test: Elixir is an app on the market that lets you test all the sensors available. I'd go through all of them one by one to make sure that they work properly, and you may want to turn on all sensors to see if there's no issues when trying to use multiple ones at the same time.

AT%T has two versions of Galaxy S II, one is a hundred dollars more because it has LTE. Is that worth it? I'll be living in an LTE area before the contract ends.

It really is. However, it is amazing for more bandwidth heavy applications like Netflix or Youtube or any other large downloads where 3G really struggles. And tethering as well. At least on Verizon LTE phones, you can enable and disable it whenever you feel like it, so I'm sure you can do the same on other carrier's phones.
However, the difference is far more significant on Verizon phones, since its EVDO 3G (~1 Mbps) vs LTE 4G ( ~30 Mbps). You might be perfectly content with HSPA+ since even that is magnitudes faster than EVDO.

Swype (takes a while to get used to the "drawing" of the words, but once you get the hang of it you can write novels with your thumb. on the go, anywhere. at any time.)

The default Swype is usually outdated as hell. If you're rooted you can get rid of it and install the new version which has a lot of improvements.

Correct, for whatever reason, Swype team decided that they will not offer a normal downloadable version, instead make deals with phone manufacturers to build swype into the phone.
They only allow beta versions to be installed as a normal .apk (unless you already have the manufacturer version, then you either have to root to remove it or you're fucked).
Although one of the last updates added an autoupdate system, so once the manufacturers push an update, they MIGHT MAYBE include that version, so that would sort of eliminate this problem (a problem they've intentionally created).

Theme-wise or feature wise? Because I think the prediction is improved a lot compared to the built-in Galaxy S2 Swype.
(although there was a beta version like 3-4 months ago that had a seriously broken prediction.)

The Galaxy S2 box was simple, but had this cool color changing text that made it feel a bit more exclusive. This HTC's box is like "meh, here have a phone".
